A hard sear, fresh garlic, and American Tallow. Turn steak night into the main event.
Serves 2 · Prep 10 minutes · Cook about 12 minutes, plus resting
Ingredients
- 2 boneless steaks, about 1 inch thick
- 1½ tbsp American Tallow
- ¾ tsp kosher salt, or to taste
- ½ tsp black pepper
- 2 garlic cloves, lightly crushed
- 2 sprigs fresh rosemary or thyme
Let’s cook
- Pat steaks very dry and season with salt and pepper.
- Warm a heavy skillet over medium-high heat. Add tallow; once shimmering, carefully lay in the steaks.
- Sear without moving for about 3 minutes. Flip and cook another 3 minutes, adjusting the heat if the fat smokes.
- Reduce heat to medium-low. Add garlic and herbs, then spoon the hot tallow over the steaks. Continue cooking as needed; thickness and starting temperature change the timing.
- For a food-safe result, check the center with a thermometer and cook to at least 145°F. Transfer to a plate and rest at least 3 minutes before slicing.
