Make the side dish the first thing gone. Crisp Brussels sprouts with beef tallow, garlic, and a squeeze of lemon.
Serves 4 · Prep 10 minutes · Cook 25–30 minutes
Ingredients
- 1½ lb Brussels sprouts, trimmed and halved
- 2 tbsp American Tallow, melted
- ¾ tsp kosher salt, or to taste
- ¼ tsp black pepper
- ½ tsp garlic powder
- 1–2 tsp fresh lemon juice
Let’s cook
- Heat oven to 425°F. Dry the trimmed sprouts thoroughly so they roast instead of steam.
- Toss sprouts with melted tallow, salt, pepper, and garlic powder.
- Arrange cut-side down on a rimmed metal baking sheet in a single layer.
- Roast 20 minutes. Turn and roast 5–10 minutes longer until the cut sides are browned and the centers are tender.
- Finish with lemon juice, taste for seasoning, and serve hot.
